This Elk is about 6 lbs, this was our experience with this wonderful meat : we did not want to cook the whole loin so we cut it in 4 parts and vacummed sealed each bag with different seasonings, we used the sous vide cooking method for precision and we also cooked it on the cast iron , both final temps were 130F, very tender and smooth elk flavor.
So you can sous vide , oven bake or smoke it, you can cook the whole loin or cut it in different servings, the fun is up to you. Enjoy!
